Salmon guacamole wonton cups – Work what ya pantry gave ya

Okay, so the song is really Shake What Ya Mama Gave Ya, but the idea is the same…..work what you have.

On one of many nights where I just didn’t feel like cooking much at all and hadn’t gone grocery shopping in a while, these babies were born with little effort and items already sitting in my pantry.

The girls loved them. And I was happy they were edible and only took 10 minutes to throw together.

What’s in them?

  • A can of salmon, a can of spicy diced tomatoes on the bottom
  • An avocado chopped small and mixed with sour cream (mayo or cream cheese would work, too), lemon juice, and some salt
  • Baked wonton cups made by slicing eggroll wrappers into quarters, putting in muffin tins, spritzing with cooking spray and salt, and broiling for 3-4 minutes
  • Chopped chives sprinkled on top because as L says, it makes them “look fancy,” and suddenly a million times more appealing to them.

Yay for another laziness-inspired success.

Sunflower Snack from Crafty Moods
Cute, eh? I know a lot of people who would look at that and say “eh, that’s too much work” but look at it. It really couldn’t get any simpler than that. Instead of leaving the cheese in rectangle slices, they’re diagonally cut in half, and within a couple minutes, they’d easily be laid out into a sunflower.
The center could be filled with other fruits, really, to turn this into something picky kids would love. Or it could work as a nice appetizer platter for a school event, a family party, and well, any kind of quirky party I would throw myself. :P

The wattle waddles…er, wobbles – Thanksgiving turkey cheeseball

That was one of my Thanksgiving dinner contributions.

I can’t even remember which cheeseball recipe I used, but it was delicious, rolled in a mix of chopped walnuts, almonds, and pecans. What? I couldn’t decide.

The wattle is made of a tiny piece of spaghetti, soaked in red food coloring. The neck and head piece are from a Slim Jim that I forced to hold its shape with a clip for a while.

The beak is a bit of cream cheese colored yellow, and the eyes are the same concept. I did my icing with the tiny corners of ziploc bags like this:


And the tailfeathers? They’re a combination of pretzel sticks in the front and larger sesame sticks in the back row. By the end, only a few tail feathers remained, and even those didn’t make it through the night. Delicious.
