Groundhog’s Day meatloaves – Happy Rodent Day!

I think my meatball groundhogs are more like meatloaf gophers, but same idea, right? B thought they were more like squirrels even, oops! And another looks more like a rat. Hmm. A rodent is a rodent?

Or not.

I wasn’t sure what to make the cartoon faces out of, so tried a few different things. This one has radish and  and cut chocolate baking chips as eyes, cranberry nose, monterey jack teeth, and baking chip ears. I gave each rodent a lobotomy, it seems, to wedge their new found body parts into.

I tried oyster crackers for ears on this one and cut the cranberry in half so it’d be flatter on this one. Not that you can tell in the picture, but he’s a little less Rudolph-ish.

Gopher caught in the headlights! Er, I mean, ground hog. I switched to dark colored cranberries cut in half for the eyes and walnuts for ears. This one is a little more squirrel-like.

I’m thinking along the lines of Animaniac’s Skippy when he’s crying, similar to the 1:50 point in this video.

Anyway, more rodents!

I tried going for a more realistic “groundhog walking around on the ground” viewpoint, but uh, yeah, it looks like a rat, hehe. The only thing that’s missing is a licorice tail.

When I started running out of time, I solicited some help. :D This little guy is my sister’s groundhog. Oh, and that’s brown mustard on the eyes to help stick some of the parts together. My little rodent family:

Chinese eggroll nachos

Quite often, it seems, I’ll plan on making one dish and it ends up morphing into another. Maybe I realize I’m out of an ingredient or a recipe isn’t going right at all or sometimes, I run out of time and need a dish ready to prepare *now,* not half an hour from now.

These nachos ended up being a result of all three. I had spent quite a bit of time preparing the filling for pseudo-eggrolls and was already running out of time to roll them. About three eggroll wrapper attempts in, I discovered that it just wasn’t happening. My wrappers were cracking and tearing from being in the fridge too long.

I didn’t have time to create something completely new for supper and instead, tossed in the extra ground pork I had, left out the carrots I hadn’t mixed in yet, and dumped it over tortilla chips with a dollop of sour cream.

I stuffed some into a part of a package of wonton wrappers, but gave up there, too, and ended up frying the rest of the wontons and eggroll wrappers (cut into quarters) into “chips.” I don’t seem to have a picture of that, but wonton chips rock anyway and seemed even more fitting for these “nachos.”

(^ I took that picture by request of one of the little ones ’cause she said it looked pretty. It was just a snapshot to please her or I probably would’ve cleaned up the stray meat scattered on the table next to the bowls. Oops.)

Fresh sausage and storebought sausage

Which one of those looks more appetizing? If you’re a vegetarian or weirded out by raw meat, your opinion doesn’t count. :P Maybe “which one looks more real?” is the better question. You should be able to click the picture to get a larger view, but if not, here’s the link.

Either way, I couldn’t help but snap this picture of sauage one morning. I’d just had a fresh hog butchered, but wanted to finish up some already purchased sausage that I had, so I was going to combine the two.

It was really hard to want to eat the storebought paste after not only see how drastically different the colors were, but also that the glue on the right is roughly the same color as my kitchen counter. I don’t think that’s normal, heh.
