Peanut Butter and Jelly Cupcakes

The first time I saw these a couple months ago, I knew I had to make them. I don’t usually make or eat peanut butter and jelly sandwiches very often, but who isn’t familiar with them as a traditional sandwich? I love that the classic dish has been transformed into a fun dessert or snack. What a cute treat to put in a kid’s lunch box for school, too!

Like Deborah, I found that I had to add extra sugar to the icing to give it any sweetness at all. I know the jelly has some sweetness, but the “icing” in its printed form just tastes like extra creamy peanut butter and there’s nothing unique about it without the extra sugar.

Oh, and I used regular peanut butter, not the natural kind that she experimented with.


Straight out of the oven with a slight conical shape


Tip: Flatten the tops gently when they come out of the oven to create an even surface for the icing and “well” of jelly.


Slightly flattened and ready to be iced.


Tip: Spread the icing on in an even layer. Using a small spatula, place the tip in the middle and turn gently to create a hole for the jelly.

N: Or a bird —
L: No, a dog!
B: Nuh uh, birds are better.
Me: We’re not going to the pet store guys…
B: Oo, or we could get a Jessi.
N: Yeah, a Jessi, and then we’d have two.
B: Yeah! Then we could have one to cook the desserts
Me thinking: And another to do the rest of the cooking, cleaning, etc, but no…
B: And another one to cook more desserts!
N & L: Yeah, that’d be cool. Jinx!

They continued to talk about what kind of desserts each of the Jessis would make, what they’d request….and what they’d call the other Jessi, lol. It’s great to know that the girls would love to have two of me…if only for me cooking desserts!

And those are chicken nuggets you’d buy at a pet store. Chicken nugget sheep? Aren’t they cute? ;)

Food tattoos – When cravings become permanent

There’s no doubt about it that I love food. I thoroughly enjoy consuming it, preparing it, looking at it, playing with it, sharing it, reading about it, learning about it, feeling it, dreaming about it, imagining myself being it…

Er.

Anyway, these people took food to a whole new level by tattooing variations on their bodies. Continuing the QJ tattoo tradition, here’s a few quirky food tattoos.
